New Walk-in
Coolers
The Sabine Area Restaurant Association
(SARA) generously donated a walk-in refrigerator and a walk-in freezer to the
FCSC department. “The walk-in coolers
are a wonderful addition to the program and we are very grateful to SARA for
the gift” said Chef Charles Duit, adjunct professor. Additional
FCSC Course Offerings New and
exciting courses are continually being added to the Family and Consumer
Sciences curriculum. In Spring 2000,
Dr. Amy Pemberton, associate professor,
taught for the first time FCSC 5313: EATING DISORDERS. The students in this course participated
in a National Eating Disorders Screening Program where a prevalence study on
eating disorders was conducted on the Lamar campus. Dr. Pemberton said this course was very successful.
For Fall 2001, Sherry Batson, adjunct instructor, taught FCSC 4324: Design Illustration for the Interior Design program. |

Ms Brooks earned her BS in Chemistry from the University of Florida,
an MD from the University of Texas-Southwestern and completed a three year
residency at St. Paul Medical Center in Dallas. She is board certified in Internal Medicine and practiced in
Beaumont for 10 years. Holly pursued
an Associate of Applied Science Degree for Houston Community College and
completed her Internship at the Museum of Fine Arts in Houston. Her professional experiences include: 5
levels of embroidery at Lesage in Paris, France; 5 levels of Japanese
embroidery; taken class trips to New York and Paris France; and participated
in FGI Dallas student competitions with garment collections. Her interests includes flat pattern,
quilting, historical and couture garments. A new course has
been added to the Dietetic Internship curriculum. This course is called Dietetic
Practitioner. This course is taught
in the second summer session by Jill Chesser-Killough, clinical instructor. Fun and Fashion in Dallas
The weekend of March 9, 2001, Anita Devillier, instructor of Fashion
Retailing and Merchandising; Sherry Batson,
adjunct instructor; and nine students from Devillier’s class took a
trip to Dallas. Over the course of two days students
attended a series of professional workshops and seminars, a career fair, and
a fashion show. The fashion show
opened with designs by Michael Faircloth, who is the designer for First Lady
Laura Bush. Other highlights of the
trip included visits to the International World Trade Center, J.C. Penney
Corporate Headquarters, and Gerber Garment Technology, Inc. The students gained first-hand insight
into the fashion world and brought back new ideas for future courses. |
