The Development of an Area Dietetic Association
We have contacted the Texas Dietetic Association about developing a dietetic association in Southeast Texas. This is a lengthy process and may take over a year to incorporate. To begin this process we are conducting a feasibility study to find out what impact an area association might have on the Tall Pines or Houston area associations. Participation in this study is greatly appreciated and will allow us to facilitate the organization of this group.
An area association will enable local dietitians to strengthen our support network and offer opportunities for continuing education credits. It is our hope that the association will cater to the dietitians, retirees and students in Southeast Texas. We want to make this a successful association. In order to do this, we need your help. Please take 5 minutes to complete the enclosed survey. If you have any extended information, please include it with the survey.

Get geared up for National Diabetes Month!!! The focus of National Diabetes Month is preventing and treating diabetes by increasing awareness of the chronic disease affecting more than 17 million Americans a year. We can help prevent and protect other Americans from developing diabetes by encouraging good health and regular exercise by following the guidelines for good nutrition and maintaining a healthy weight.
Tips for Thanksgiving Meal:
Sweet or red potatoes offer more nutrients than white potatoes offer them instead for a delicious alternative.
Bake apple or peach pies or cobbler with sugar substitute– your guests won’t know the difference.
During the holidays it is important to limit your portion sizes. Remember a portion of food should equal approximately the size of your palm.

December is the month for giving. This is a good time to give to your local food drive.

We are here to help you. Lamar Dietetics program has developed dates and time for CPE’s. The first topic is “Getting Started on Your Portfolio.” This session will be held on Wednesday, October 1, 2003 at 4:00 pm in the Lamar University FCS building room 108.

Welcome our 2003-2004 Interns
A new group of future dietitians are anxious to begin the their rotations this fall as dietetic interns. This year eight interns have been chosen to participate in Lamar’s program: Elizabeth Beasley, Kelli Campeau, Stephanie King, Claire Lininger, Camela Mojica, Lisa Owers, Stacy Pruitt, and Amber Woodard. Liz is originally from Chicago, Illinois and graduated from the University of Texas in Austin with a BS degree in Nutrition in May of 2002. She is currently seeking a Master’s Degree in Dietetics along with completing the internship. All the way from Michigan, Lamar is excited to have Kelli! Kelli recently graduated from Michigan State University in May of 2003 with a BS degree in Nutrition/Dietetics w/ a Health Promotion specialization. Originally from the Central Valley area of California, Stephanie completed her Master’s Degree in Dietetics here at Lamar in December of 2002. She eventually would like to become a college professor in the area of nutrition, and has a special interest in diabetes education. A graduate of Oklahoma State University with a BS degree in Nutrition/Dietetics, the program welcomes Claire as a intern as well as a graduate student. Claire has a special interest in Nutrition and Wellness and was even a LMT (Licensed Massage Therapist) in Oklahoma. Camela comes to LU as a native of Plano, Texas! In May of 2003, Camela graduated from Texas Christian University with a BA in Nutrition, and would eventually like to work in the area of Sports Nutrition. After working in this area as a RN for a few years, Lisa decided to obtain her Master’s Degree in Dietetics at Lamar and eventually become a RD. Although the nursing field is losing a valuable member, we are excited Lisa has chosen to join the field of dietetics! Stacy is a recent graduate of Lamar’s Dietetic Program, and is also currently working on her Master’s Degree. With previous experience working in long term care facilities, Stacy is excited to start the program and later become a RD. Also a recent graduate from Lamar with a BS in Dietetics, Amber is also ready to begin this year’s internship. Having a special interest in the area of nutrition, Amber is definitely anxious to complete the internship and work as a RD in the area. A warm Southeast Texas welcome and a good luck wish to all the new interns.
